Ingredients

  • 9 medium Russet potatoes, Idaho preferred, peeled and quartered
  • 2/3 cup milk
  • 1/2 cup butter, room temperature
  • 1 1/2 - 2 teaspoons salt, to taste
  • 1/4 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup whipping cream, whipped
  • green onions, sliced (for garnish)

How To Make potato casserole supreme

  • Step 1
    Cook the potatoes, covered, in boiling water to cover for 15 minutes or until tender. Drain, and then mash with a potato masher.
  • Step 2
    Add the milk, butter, salt, and pepper; beat at medium speed of an electric mixer until smooth.
  • Step 3
    Spoon the potato mixture into a lightly greased 13x9x2-inch baking dish.
  • Step 4
    Fold the cheese into the whipped whipping cream and spread over the potato mixture.
  • Step 5
    Bake at 360 degrees F for 25 minutes or until lightly browned. Garnish with sliced green onions or parsley if desired.
