Easy peasy German recipe but goes well with any number of cuisines. Great use of leftover mashed!

Ingredients
- 3 cups mashed potatoes
- 2 large eggs, lightly beaten
- 1/4 teaspoon black pepper, coarsely ground
- 1/3 cup all purpose flour
- 2 teaspoons fresh chives, chopped
- 2 tablespoons butter
How To Make potato cakes

Step 1Mix all ingredients EXCEPT the butter, until thoroughly blended. NOTE: If your potatoes were stiff, only use 2 tablespoons of the flour)

Step 2Form the mixture into 3-inch patties, about 1 inch thick.

Step 3Melt the butter over medium-high heat until bubbly. Add the potato cakes to the pan, then reduce the heat to medium. Fry until golden brown on each side.

Step 4Serve immediately or place in the oven on the "warm" setting.
