Easy peasy German recipe but goes well with any number of cuisines. Great use of leftover mashed!

Ingredients

  • 3 cups mashed potatoes
  • 2 large eggs, lightly beaten
  • 1/4 teaspoon black pepper, coarsely ground
  • 1/3 cup all purpose flour
  • 2 teaspoons fresh chives, chopped
  • 2 tablespoons butter

How To Make potato cakes

  • Step 1
    Mix all ingredients EXCEPT the butter, until thoroughly blended. NOTE: If your potatoes were stiff, only use 2 tablespoons of the flour)
  • Step 2
    Form the mixture into 3-inch patties, about 1 inch thick.
  • Step 3
    Melt the butter over medium-high heat until bubbly. Add the potato cakes to the pan, then reduce the heat to medium. Fry until golden brown on each side.
  • Step 4
    Serve immediately or place in the oven on the "warm" setting.
