Easy peasy German recipe but goes well with any number of cuisines. Great use of leftover mashed!

Ingredients For potato cakes

3 cmashed potatoes

2 lgeggs, lightly beaten

1/4 tspblack pepper, coarsely ground

1/3 call purpose flour

2 tspfresh chives, chopped

2 Tbspbutter
How To Make potato cakes

1Mix all ingredients EXCEPT the butter, until thoroughly blended. NOTE: If your potatoes were stiff, only use 2 tablespoons of the flour)

2Form the mixture into 3-inch patties, about 1 inch thick.

3Melt the butter over medium-high heat until bubbly. Add the potato cakes to the pan, then reduce the heat to medium. Fry until golden brown on each side.

4Serve immediately or place in the oven on the "warm" setting.
