  • 2 medium
    baked potatoes, shredded
  • 2
    pickled jalapeno peppers
  • 1/2 c
    grated cheddar cheese
  • 1/4 c
    flour
  • ·
    eggs
  • ·
    olive oil
  • ·
    salt & pepper to taste

How to Make Potato Cakes Jalapeno Cheese

Step-by-Step

  1. I use leftover baked potatoes, if using fresh ones allow to cool completely. Shred, once the skin comes off I remove any large pieces and throw them out.
  2. Chop two pickled jalapeno peppers and grate 1/2 cup of cheddar cheese.
  3. Mix potatoes, jalapeno, cheese and egg together. Add just enough flour to make them sticky, about 1/4 c. Form patties and brown in a skillet or on a griddle that is generously greased with olive oil (or butter or bacon fat).
