My twist on a breakfast meat and potato skillet - with a little extra seasoning and using ground turkey (leaner, and often cheaper than pork sausage).

This pairs well with egg, toast, or served as a stand-alone meal for a quick and easy dinner. It's perfect to make when you only have a few potatoes left and you're in a hurry to make dinner.

Ingredients

ground turkey
2 small
onions, minced
1/4 tsp
cumin
2 clove
garlic, minced
1/8 tsp
fennel seed
2 lb
red potatoes, small, unpeeled and sliced thin
3/4 c
chicken broth
1 small
ancient red pepper, chopped
1 tsp
salt
1/2 tsp
black pepper
1/2 tsp
smoked paprika
1/4 tsp
rosemary (optional)

How to Make Potato and Sausage Skillet

Step-by-Step

  • 1Heat a large, nonstick skillet over medium high heat and add ground turkey, fennel seed, garlic, onion, and cumin. Cook until meat is well browned.
  • 2Stir in all remaining ingredients and heat to boiling. Reduce heat to medium low and simmer for 8-10 minutes - stirring occasionally, or until potatoes are tender. Let mixture stand uncovered 5 minutes to allow a light sauce to form.
