potato and sausage skillet

My twist on a breakfast meat and potato skillet - with a little extra seasoning and using ground turkey (leaner, and often cheaper than pork sausage). This pairs well with egg, toast, or served as a stand-alone meal for a quick and easy dinner. It's perfect to make when you only have a few potatoes left and you're in a hurry to make dinner.

Ingredients
- 1/2 pound ground turkey
- 2 small onions, minced
- 1/4 teaspoon cumin
- 2 cloves garlic, minced
- 1/8 teaspoon fennel seed
- 2 pounds red potatoes, small, unpeeled and sliced thin
- 3/4 cup chicken broth
- 1 small ancient red pepper, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon rosemary (optional)
How To Make potato and sausage skillet

Step 1Heat a large, nonstick skillet over medium high heat and add ground turkey, fennel seed, garlic, onion, and cumin. Cook until meat is well browned.

Step 2Stir in all remaining ingredients and heat to boiling. Reduce heat to medium low and simmer for 8-10 minutes - stirring occasionally, or until potatoes are tender. Let mixture stand uncovered 5 minutes to allow a light sauce to form.
