Potato and Cheese Casserole

Ingredients

2 lbbaking potatoes peeled and diced into 2 inch pieces

1 clovegarlic,minced or pressed

1/2 cthinly sliced green onion
-
2 Tbspbutter or margarine
-
4 ozcream cheese, room temperature and cut into cubes
-
1/2 chalf and half
-
3/4 tspsalt
-
1/4 tsppepper
-
8 ozcold brie or camembert cheese w/rind removed diced into 1/2 inch pieces. thyme or parsley for garnish
How to Make Potato and Cheese Casserole
- Cook potatoes in boiling,salted water for 15 min or until tenter. Drain well.
- Meanwhile,saute garlic and green onion in butter for 12 minutes or until softened.
- Mash potatoes. Beat in garlic butter mixture, cream cheese, half and half, salt and pepper.
- Fold in Brie or Camembert cheese.
- Place in 1 1/2 quart casserole.
- Bake at 450 for 15 minutes or until top begins to lightly brown. Garnish with thyme or parsley.
