potato and cheese casserole

I got this recipe from my mother; she used to serve it every Sunday after Church. I loved it.

Ingredients

  • 2 pounds baking potatoes peeled and diced into 2 inch pieces
  • 1 clove garlic,minced or pressed
  • 1/2 cup thinly sliced green onion
  • 2 tablespoons butter or margarine
  • 4 ounces cream cheese, room temperature and cut into cubes
  • 1/2 cup half and half
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 8 ounces cold brie or camembert cheese w/rind removed diced into 1/2 inch pieces. thyme or parsley for garnish

How To Make potato and cheese casserole

  • Step 1
    Cook potatoes in boiling,salted water for 15 min or until tenter. Drain well.
  • Step 2
    Meanwhile,saute garlic and green onion in butter for 12 minutes or until softened.
  • Step 3
    Mash potatoes. Beat in garlic butter mixture, cream cheese, half and half, salt and pepper.
  • Step 4
    Fold in Brie or Camembert cheese.
  • Step 5
    Place in 1 1/2 quart casserole.
  • Step 6
    Bake at 450 for 15 minutes or until top begins to lightly brown. Garnish with thyme or parsley.
