Ingredients

    ground beef
  • 1/2 tsp
    salt
  • 1 tsp
    black pepper
  • 1 tsp
    oregano
  • 1 tsp
    cumin
  • 4 clove
    garlic, minced
  • 1
    medium onion, diced
  • 1
    medium jalapeno pepper, diced
  • 1 Tbsp
    all purpose flour
  • 1/2 c
    beef stock
  • 1 can(s)
    (15 oz) diced tomatoes
  • 2
    medium potatoes (peeled and diced)
  • 1 1/4 c
    green or black olives, chopped
  • ·
    oil for sauteing

How to Make Picadillo

Step-by-Step

  1. Place the ground beef in a mixing bowl. Add salt, pepper, oregano and cumin. Combine thoroughly. Set aside.
  2. Heat the oil in a frying pan and saute the onions, jalapeno pepper and garlic until soft.
  3. Crumble the ground beef mixture into the onion mixture and cook until the meat is slightly brown. Add the flour to the ,ixture and stir until flour is combined well.
  4. Add the beef stock, tomato sauce and potatoes. Stir well, cover and cook on medium-low heat for another 20 minutes.
  5. Uncover, add olives, if using. Cook, uncovered, another 15 minutes or until liquid has reduced but meat is still moist.
  6. Add more salt and pepper if needed.
  7. Serve hot with refried beans, rice, your favorite salsa and hot flour tortillas. Also great for making burritos or empenadas.
