Ingredients
- 2 1/2 pounds russet potatoes peeled and grated
- 1 small onion grated
- 1 cup frozen peas thawed
- 1/4 cup fresh parsley chopped
- 3 tablespoons flour
- - zest of 1 lemon
- - salt and pepper
- 1 large egg
- 2 cups sour cream
- - juice of 1 lemon
- 1 bunch green onons
How To Make pea and potato pancakes w lemon sour cream

Step 1Squeeze as much liquid out of the potatoes and mix with the next 7 ingredients.

Step 2Mix the sour cream, lemon juice, green onions with some salt and pepper.

Step 3Add some oil to a large skillet. Scoop out potato mixture and drop into hot oil. Flatten with spatula and brown well on each side. Remove from skillet and drain on paper towels. Work in batches. Serve with a dollup of sour cream mixture.
