It seems my bad habits are rubbing off on my sweet husband. I have a horrible habit of 'borrowing' magazines from the doctor's office or anywhere I go. If I see a recipe I can't live without, I borrow it and return it next time I am there...take a big purse.
My husband did me proud by bringing home a recipe he wanted me to try. We modified it and named it after him.

Ingredients

8 slice
bacon
4 medium
potatoes cut in 3/3 inch cubes
1
onion diced

DRY RUB

2 tsp
salt
1 1/4 tsp
pepper
1 tsp
paprika
1 tsp
garlic powder
1/4 tsp
dried thyme
1/4 tsp
dried crushed rosemary
1/8 tsp
celery seed

DRESSING

5 1/2 Tbsp
mayonnaise
2 Tbsp
dijon mustard
2 tsp
worcestershire sauce

How to Make Paul's Secret Tater Salad

Step-by-Step

  • 1Cook bacon until crispy, drain on paper towel.
    Add potato, onion and dry rub to hot dripping, toss about in skillet to coat.
  • 2Remove mixture to drain grease. Add back to skillet, cover. Stir often until brown.
  • 3When potatoes are done, add to large bowl, add dressing. Mix well, add crumbled bacon.
    Garnish with parsley, if desired.
  • 4This is so good. Enjoy!!!
