Quick easy side dish. Great for meat and potato lovers. This is my husbands favorite way to have potatoes.

Ingredients

  • 4 large russet potatoes peeled and diced
  • 2 tablespoons dry parsley or 4 tablespoons fresh
  • 1 tablespoon salt
  • 4 cups water or enough to cover potatoes.
  • 1/4 cup margarine

How To Make parsley potatoes.

  • Step 1
    Add potatoes, parsley, salt and water to pot, bring to boil. Simmer till fork tender.
  • Step 2
    Drain well add margarine stir till margarine is melted. Adjust salt to taste. Do not mash, leave as bite size pieces.
  • Step 3
    Keep warm till ready to serve. Enjoy.
