Quick easy side dish. Great for meat and potato lovers. This is my husbands favorite way to have potatoes.

Ingredients

4 large
russet potatoes peeled and diced
2 Tbsp
dry parsley or 4 tablespoons fresh
1 Tbsp
salt
4 c
water or enough to cover potatoes.
1/4 c
margarine

How to Make Parsley Potatoes.

Step-by-Step

  • 1Add potatoes, parsley, salt and water to pot, bring to boil. Simmer till fork tender.
  • 2Drain well add margarine stir till margarine is melted. Adjust salt to taste. Do not mash, leave as bite size pieces.
  • 3Keep warm till ready to serve. Enjoy.
