Quick easy side dish. Great for meat and potato lovers. This is my husbands favorite way to have potatoes.

Ingredients

Add to Grocery List

  • 4 large
    russet potatoes peeled and diced
  • 2 Tbsp
    dry parsley or 4 tablespoons fresh
  • 1 Tbsp
    salt
  • 4 c
    water or enough to cover potatoes.
  • 1/4 c
    margarine

How to Make Parsley Potatoes.

Step-by-Step

  1. Add potatoes, parsley, salt and water to pot, bring to boil. Simmer till fork tender.
  2. Drain well add margarine stir till margarine is melted. Adjust salt to taste. Do not mash, leave as bite size pieces.
  3. Keep warm till ready to serve. Enjoy.
