parsley potatoes/w bread cubes
This is the way my mom made parsley potatoes when I was young and money was scarce. I have always loved potatoes fried up like this and still make them today...I am sure many of you have fond memories of these fried morsels....

Ingredients
- 2 large potatoes, peeled and cubed, or leftover cold potatoes
- 1 slice (stale bread is best) homemade bread or thick sliced bread, cubed
- 2 tablespoons bacon grease
- 2 tablespoons margarine
- 1 tablespoon minced garlic
- 2 tablespoons parsley flakes
- - salt and pepper,to taste
- - bacon bits, optional
How To Make parsley potatoes/w bread cubes

Step 1Cover potato cubes with water and boil for 8 minutes to al dente- do not let them become mush. ( I usually use cold leftover potatoes for this recipe). Drain and put back into pan and back on the burner to let the heat from the stove(no flame)grate evaporate and dry the potatoes.

Step 2In a large heavy skillet melt the bacon grease and margarine; add the bread cubes,and garlic. Fry until the bread begins to toast or brown.Add the potato cubes...Fry with the bread until both are crispy and browned, about 5-6 minutes...add salt and pepper and parsley- bacon bits if you have them.

Step 3Serve with ketchup or ranch dressing.
