- 1 1/2 pounds small red potatoes peeled
- vegetable oil for deep frying
- salt
- 1 cup freshly parmigiano-reggiano cheese
- 2 tablespoons black truffle oil
How To Make parmesan truffle potato chips

Step 1use a mandolin to slice the potatoes very thin. Soak them in cool water for 30 minutes. Drain and dry completely.

Step 2Heat the oil to 360 degrees. Deep fry the potatoes for 3 to 5 minutes until golden brown. Drain on paper towels. Season with salt. Transfer the potatoes to a bowl
