  • 1 1/2 pounds small red potatoes peeled
  • vegetable oil for deep frying
  • salt
  • 1 cup freshly parmigiano-reggiano cheese
  • 2 tablespoons black truffle oil

How To Make parmesan truffle potato chips

  • Step 1
    use a mandolin to slice the potatoes very thin. Soak them in cool water for 30 minutes. Drain and dry completely.
  • Step 2
    Heat the oil to 360 degrees. Deep fry the potatoes for 3 to 5 minutes until golden brown. Drain on paper towels. Season with salt. Transfer the potatoes to a bowl
  • Step 3
    Toss with the truffle oil and cheese. Serve immediately
