    small red potatoes peeled
  • vegetable oil for deep frying
  • salt
  • 1 c
    freshly parmigiano-reggiano cheese
  • 2 Tbsp
    black truffle oil

How To Make parmesan truffle potato chips

    use a mandolin to slice the potatoes very thin. Soak them in cool water for 30 minutes. Drain and dry completely.

    Heat the oil to 360 degrees. Deep fry the potatoes for 3 to 5 minutes until golden brown. Drain on paper towels. Season with salt. Transfer the potatoes to a bowl
