This recipe is a refreshing change from the same old mashed potatoes. These can be prepared 6 hours ahead - cover and chill. Stir over low heat to rewarm, adding more milk by tablespoonfuls, if needed.

Blue Ribbon Recipe

These Parmesan prosciutto mashed potatoes are a wonderful twist on a comforting side dish. We loved adding prosciutto and thyme to the creamy mashed potatoes. It adds a salty, savory angle to the flavor profile. Sauteing the prosciutto in butter crisps it, adding a crispy, chewy texture to the smooth mashed potatoes. A great way to improve a crowd-pleasing side dish. If you want a richer flavor, use heavy cream instead of milk.
