Found this one online, I tried this last nite. My kids and I loved these. Fairly easy to make, but a little messy but well worth it.

Ingredients
- 1 - small shallot chopped fine
- 2 - garlic clove, chopped fine
- 2 cups half and half
- 1 1/2 cups grated parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3-4 - small baking potatoes, peeled and sliced in 1/8 in. slices

Step 1Preheat oven 400, and grease 12ct.muffin tin. stack potatoes in muffin tin, In a bowl mix, milk, shallots, garlic, cheese, salt and pepper. mix will and pour over potatoes.Cover potatoes with foil and bake for about 35 minutes, uncover and bake about 15 more minutes tops will brown a bit. to check for doneness stick a sharp knife into, if it goes easy they are done.
