Ingredients
- 8 red potatoes, small
- 3 tablespoons butter melted
- 4 tablespoons fresh grated parmesan cheese
- 3 cloves garlic minced
- salt and pepper
- 2 teaspoons fresh thyme minced
- additional parmesan for garnish
How To Make parmesan potato stacks

Step 1Wash the potatoes and cut and discard the ends. Slice very thin on a mandolin about 1/16 inch. Preheat oven 375 degrees. Spray a muffin pan with cooking spray.

Step 2Add the melted butter, Parmesan cheese, thyme, garlic, salt and pepper to a bowl. Add the potato slices and coat well in the butter mixture.

Step 3Layer the potato slices into the muffin cups. Bake until golden brown about 45 minutes. Remove from muffin tins with a spoon. Top with additional Parmesan and serve
