Parmesan Potato Stacks
8red potatoes, small
3 Tbspbutter melted
4 Tbspfresh grated parmesan cheese
3 clovegarlic minced
·salt and pepper
2 tspfresh thyme minced
·additional parmesan for garnish
How to Make Parmesan Potato Stacks
- Wash the potatoes and cut and discard the ends. Slice very thin on a mandolin about 1/16 inch.
Preheat oven 375 degrees. Spray a muffin pan with cooking spray.
- Add the melted butter, Parmesan cheese, thyme, garlic, salt and pepper to a bowl. Add the potato slices and coat well in the butter mixture.
- Layer the potato slices into the muffin cups. Bake until golden brown about 45 minutes. Remove from muffin tins with a spoon. Top with additional Parmesan and serve
