Ingredients
- 4 tablespoons olive oil divided
- 1 medium onion chopped
- 4 cloves garlic minced
- salt and pepper
- 2 pounds yukon gold potatoes peeled and grated
- 1 cup freshly grated parmesan cheese
- fresh basil for garnish
How To Make parmesan potato pancake

Step 1Add 2 tbsp oil to a large skillet. Add the onion and cook until translucent. Add the garlic and cook another 30 seconds. Season with salt and pepper and transfer to a dish and set aside.

Step 2Grate the potatoes and place them in a clean dishtowel and squeeze as much water out as possible. Add the potatoes to the bowl with the onions and add the Parmesan and basil.

Step 3Add the remaining 2 tbsp oil to the large skillet. Once hot place the potato mixture in the skillet and flatten. Cook until browned on one side. Slide the potato pancake up the side and flip onto a plate. Then slide it back into the pan and brown on the other side.

Step 4Remove from pan and cut into wedges and serve.
