Ingredients
- 2 pounds yukon gold potatoes peeled and cubed.
- 2 cups chicken stock
- 4 ounces cream cheese
- 1/2 cup sour cream
- 1/2 cup shredded parmesan cheese
- salt, pepper and butter
How To Make parmesan mashed potatoes

Step 1Add the chicken stock to a pot and bring to a boil. Add the potatoes and cook until most of the stock is gone. If the potatoes aren't all the way done add more stock.

Step 2Remove potatoes to a ricer and mash them. Add them back to the pot and stir in the cream cheese, sour cream and Parmesan cheese. Cook until the cheese has melted.

Step 3Season with salt and pepper and serve with a little butter and more parmesan if desired.
