pap's potato pancakes

This is a family favorite that my Pap used to make for breakfast or dinner.

Ingredients

  • 6 - medium-small potatoes, grated and squeezed dry - should be about 2# (use russet or yukon gold)
  • 1 large onion, grated or minced
  • 1/2 cup green pepper, diced (optional)
  • 1 - large egg, slightly beaten
  • 2 - 3 tablespoons flour
  • 1 teaspoon salt - to taste (i use about 1 1/2 - 2 tsp)
  • 1/4 - 1/2 teaspoon pepper - to taste (i use 1/2 tsp)
  • dash cayenne pepper, to taste

How To Make pap's potato pancakes

  • Step 1
    Mix eggs and seasoning together - slightly beat eggs - set aside In a large bowl combine potatoes, green pepper, and onion Sprinkle flour over potato mixture, stir until well combined Stir in egg mixture Heat a couple of tablespoons of oil in frying pan Drop potato mixture in frying pan, slightly flatten Fry until golden brown and crispy on each side (about 3-4 minutes on each side) Remove from pan, drain on paper towels Serve hot

    *Since this recipe makes a good bit I preheat the oven to 350 and after draining pancakes on paper towels I place them on a rack-lined baking sheet to keep crisp and warm until I'm ready to serve. However, I think they are best eaten right out of the skillet.
  • Step 3
    ***If you don't want to end up with a whole lot of juice in the bottom of your bow of potatoesl - shred your potatoes and place in a strainer, using your hands to squeeze out as much of the liquid you can before mixing the ingredients together. I like to let the starch settle in the bottom of a bowl (from the squeezing liquid out), then I pour off the water and stir the starch back into the potatoes before adding the flour and eggs. Or.... you can cheat and buy a bag of shredded potatoes at the grocery store.
