This is NOT my original recipe! I found it on Facebook at "Judy's Recipes and Other Stuff". It looked so good I tried to pinch it, but Facebook doesn't have the proper format. So.... I pinched it here. The original title of the recipe was too long for "Just a Pinch", but is "Greek Style Oven Roasted Lemon Butter Parmesan Potatoes". ENJOY!

Ingredients

  • 3 pounds potateoes
  • 1 cup chicken broth
  • 2 tablespoons lemon juice
  • 1/4 cup butter, melted
  • 1 teaspoon oregano
  • 1 tablespoon garlic, minced
  • 3/4 cup parmesan grated
  • - parsley
  • - salt and pepper

How To Make oven roasted delish potatoes

  • Step 1
    Preheat oven to 375
  • Step 2
    Butter baking dish (large enough to hold all the potatoes)
  • Step 3
    Peel potatoes and cut into large bite sized pieces.
  • Step 4
    Place potatoes into buttered baking dish.
  • Step 5
    In a bowl, combine the broth, lemon juice, melted butter, oregano, salt, pepper, and garlic.
  • Step 6
    Pour mixture over the potatoes in the dish. Stir to coat.
  • Step 7
    Cover tightly (foil will do) and bake about 40 minutes.
  • Step 8
    Remove cover, turn potatoes, sprinkle with parmesan cheese.
  • Step 9
    Bake, uncovered, for about 30 minutes (to desired tenderness). You may wish to sprinkle with more parmesan at this point.
  • Step 10
    Sprinkle with chopped fresh parsley and serve.
