oven roasted delish potatoes
This is NOT my original recipe! I found it on Facebook at "Judy's Recipes and Other Stuff". It looked so good I tried to pinch it, but Facebook doesn't have the proper format. So.... I pinched it here. The original title of the recipe was too long for "Just a Pinch", but is "Greek Style Oven Roasted Lemon Butter Parmesan Potatoes". ENJOY!

Ingredients
- 3 pounds potateoes
- 1 cup chicken broth
- 2 tablespoons lemon juice
- 1/4 cup butter, melted
- 1 teaspoon oregano
- 1 tablespoon garlic, minced
- 3/4 cup parmesan grated
- - parsley
- - salt and pepper
How To Make oven roasted delish potatoes

Step 1Preheat oven to 375

Step 2Butter baking dish (large enough to hold all the potatoes)

Step 3Peel potatoes and cut into large bite sized pieces.

Step 4Place potatoes into buttered baking dish.

Step 5In a bowl, combine the broth, lemon juice, melted butter, oregano, salt, pepper, and garlic.

Step 6Pour mixture over the potatoes in the dish. Stir to coat.

Step 7Cover tightly (foil will do) and bake about 40 minutes.

Step 8Remove cover, turn potatoes, sprinkle with parmesan cheese.

Step 9Bake, uncovered, for about 30 minutes (to desired tenderness). You may wish to sprinkle with more parmesan at this point.

Step 10Sprinkle with chopped fresh parsley and serve.
