oven baked barbecued potatoes

I found this recipe on The Noble Pig blog and it sounded delicious when I read it, and turned out to be super delicious when I made it. It's a great side dish or appetizer that would go nicely with a cocktail or glass of wine. The potatoes are cooked on high heat and are creamy on the inside and crisp on the outside with a hint of barbecue flavor.

Ingredients

  • 3 - medium sized potatoes, peeled and sliced into wedges
  • 1/4 cup barbecue sauce
  • 2 tablespoons olive oil
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon kosher salt
  • BARBECUE SOUR CREAM DIP
  • 1/2 cup low fat sour cream
  • 2 tablespoons barbecue sauce
  • 1 - scallion, finely chopped

How To Make oven baked barbecued potatoes

  • Step 1
    Pre heat oven to 425 degrees. Prep baking sheet with aluminum foil and dust with cooking spray. In medium size bowl mix together the barbecue sauce, oil and black pepper. Add sliced potatoes and toss well with oil mixture.
  • Step 2
    Place potatoes on prepared baking sheet. Bake 15 minutes and rotate pan. Cook another 10 minutes and remove from oven. Sprinkle with salt and let potatoes cool in the pan about 10 minutes before serving.
  • Step 3
    While the potatoes are cooling make the dip. Mix sour cream and barbecue sauce and garnish with chopped scallion.
