Ingredients
- 2 cans 2lbs bruce's yams (drained)
- 2/3 cup orange juice
- 2 teaspoons salt
- pinch pepper
- 1 teaspoon ground ginger
- 1/2 stick butter, melted
- 1/3 cup brown sugar, lightly packed
- 3 - egg yolks
- 2/3 cup brown sugar
- 1 stick butter, melted
- 1 cup chopped pecans
- 1 teaspoon ground cinnamon
How To Make pralene yams

Step 1In large mixing bowl mash potatoes until smooth

Step 2Add orange juice, salt, pepper, ginger, 1/2 butter, 1/3 cup brown sugarand egg yolks

Step 3Blend till light and fluffy

Step 4Grease a 9x13 pan (can use glass or tin)

Step 5Pour in mixture until smooth on top

Step 6Topping for yams: mix the remaing brown sugar, 1 stick butter, pecans and cinnamon spread evenly over yams

Step 7Bake at 350 degrees for 45-50 minutes

Step 8Let stand for 10 minutes before serving
