I have been making this recipe for more than 40 years and I have never heard a complaint. Everyone loves them!

  • 4 medium
    baking potatoes
  • 1/4 c
  • 1/2 c
    sour cream
  • 1/4 stick
    butter. not margarine
  • 2 Tbsp
    chives, dried
  • 1/2 c
    onions, chopped or more if you like
  • 2 Tbsp
    bacon bits
  • ·
    salt and pepper to taste
  • ·
    shredded cheddar cheese as desired
  • 1/4 tsp
    garlic powder
  • 1 Tbsp
    parsley flakes

How to Make Onion Stuffed Baked Potato


  1. Wash and bake the potatoes as usual.
  2. Halve the potatoes when done baking. Scoop out potato trying not to tear skins. Put potato in bowl. Add the rest of the ingredients and mix with electric mixer until well blended. Put potato mixture back into skins and put back into oven for about 15 minutes, until lightly browned on top.
  3. ENJOY!!!
  4. PS. You can instead, put the potato mixture in a serving bowl that is oven safe and place that in the oven for the last fifteen minutes.
