How to Make Onion Roasted Potatoes
- Preheat oven to 425 degrees. Wash potatoes and cut into halves or quarters, depending on size. No need to peel.
- Drain about 1/2 the liquid off the onions. Place potatoes, onions and remaining liquid, soup mix, and olive oil in a plastic zip-top bag. Work potatoes in bag to combine all ingredients and coat potatoes well.
- Spread potatoes and onions in a metal baking pan. Bake for 35 minutes, stirring well every 10 minutes or so, until browned and crispy on the outside and soft on the inside. Serve immediately.
