Easy, made with Lipton onion soup mix. Another of my mother's recipes. I think she loved cooking from packaged mixes. This one has a great flavor. I use Yukon Gold potatoes; she usually used new red potatoes.

Ingredients

  • 2 pounds small yukon gold potatoes
  • 1 jar cocktail onions (small jar)
  • 1 package lipton onion soup mix
  • 3 tablespoons olive oil

How To Make onion roasted potatoes

  • Step 1
Preheat oven to 425 degrees. Wash potatoes and cut into halves or quarters, depending on size. No need to peel.
  • Step 2
Drain about 1/2 the liquid off the onions. Place potatoes, onions and remaining liquid, soup mix, and olive oil in a plastic zip-top bag. Work potatoes in bag to combine all ingredients and coat potatoes well.
  • Step 3
Spread potatoes and onions in a metal baking pan. Bake for 35 minutes, stirring well every 10 minutes or so, until browned and crispy on the outside and soft on the inside. Serve immediately.
