onion roasted potatoes
Easy, made with Lipton onion soup mix. Another of my mother's recipes. I think she loved cooking from packaged mixes. This one has a great flavor. I use Yukon Gold potatoes; she usually used new red potatoes.

Ingredients
- 2 pounds small yukon gold potatoes
- 1 jar cocktail onions (small jar)
- 1 package lipton onion soup mix
- 3 tablespoons olive oil
How To Make onion roasted potatoes

Step 1Preheat oven to 425 degrees. Wash potatoes and cut into halves or quarters, depending on size. No need to peel.

Step 2Drain about 1/2 the liquid off the onions. Place potatoes, onions and remaining liquid, soup mix, and olive oil in a plastic zip-top bag. Work potatoes in bag to combine all ingredients and coat potatoes well.

Step 3Spread potatoes and onions in a metal baking pan. Bake for 35 minutes, stirring well every 10 minutes or so, until browned and crispy on the outside and soft on the inside. Serve immediately.
