Something I came up with while fooling around in the kitchen. Great for a side or an appetizer. Enjoy!

Ingredients

  • - 6 medium potatoes
  • - 1/2 cup sour cream
  • - 6 slices pre-cooked bacon
  • - 1/4 cup milk
  • - shredded colby and monterey jack cheese
  • - 1 tbsp butter
  • - salt and pepper

How To Make once, twice, three times a potato skin

  • Step 1
    I like to do these as quick as possible! Wash potatoes and poke a few holes in them. Arrange them on a dish making a full circle and microwave for 13 minutes. Let cool for 10 minutes or dig right in! Cut potatoes in halves long ways and scoop out the filling into a small bowl. Mix in sour cream, milk, butter, crumbled bacon, and salt and pepper to taste. Spray a non stick oil/butter on the potato shells and place in the oven on broil for 5 minutes to get crispy. Remove from oven and add filling. Top with cheese and put back in the oven on broil until cheese is brown. Voila! A tasty side or appetizer for family or friends.
