These are an adult flavored dish, unless your young ones are into spicy. They aren't hot, but there is am under current of heat to them. I love the combination of the roasted cinnamon and chipotle.

Ingredients

cloves garlic, finely minced
1/2
medium onion, diced (optional)
1/4 tsp
salt
1/4 tsp
pepper
1/2 tsp
roasted saigon cinnamon
1/2 tsp
chipotle chili powder (i use a full teaspoon, but it may be to warm for some)
1 Tbsp
parsley flakes
2 1/2 c
heavy cream
4 1/2 c
potatoes, thinly sliced

How to Make On the Edge Scalloped Potatoes

Step-by-Step

  • 1Preheat oven to 375 degrees. Spray shallow 3 quart casserole with butter flavored cooking spray (I use Pam)
  • 2Mix all ingredients, except potatoes, in a large mxing bowl.
  • 3Add potatoes and stir to coat well.
  • 4Pour mixture into prepared casserole dish.
  • 5Bake covered for 25 minutes. Then remove cover and bake an additional 25 minutes or until potatoes are tender.
  • 6Remove from oven and let stand 10 minutes for sauce to thicken.
