On the Edge Scalloped Potatoes

These are an adult flavored dish, unless your young ones are into spicy. They aren't hot, but there is am under current of heat to them. I love the combination of the roasted cinnamon and chipotle.

  • 2
    cloves garlic, finely minced
  • 1/2
    medium onion, diced (optional)
  • 1/4 tsp
  • 1/4 tsp
  • 1/2 tsp
    roasted saigon cinnamon
  • 1/2 tsp
    chipotle chili powder (i use a full teaspoon, but it may be to warm for some)
  • 1 Tbsp
    parsley flakes
  • 2 1/2 c
    heavy cream
  • 4 1/2 c
    potatoes, thinly sliced

How to Make On the Edge Scalloped Potatoes


  1. Preheat oven to 375 degrees. Spray shallow 3 quart casserole with butter flavored cooking spray (I use Pam)
  2. Mix all ingredients, except potatoes, in a large mxing bowl.
  3. Add potatoes and stir to coat well.
  4. Pour mixture into prepared casserole dish.
  5. Bake covered for 25 minutes. Then remove cover and bake an additional 25 minutes or until potatoes are tender.
  6. Remove from oven and let stand 10 minutes for sauce to thicken.
