oma's summer german potato salad
My Bavarian mother has made this potato salad for as long as I can remember. Unlike lots of other German food, which tends to be on the "heavy" side, this recipe is light, cool, and refreshing -- perfect for a summer picnic or to take along to a potluck!

Ingredients
- 5 pounds red potatoes, steamed or boiled in skin
- 2 medium cucumbers, peeled and thinly sliced
- 1 teaspoon salt
- 3/4 teaspoon white pepper
- 1 teaspoon celery salt
- 1/2 cup red wine vinegar
- 2 tablespoons canola oil
- 1/2 cup beef buillion
- 1 bunch scallions
- 1 tablespoon chives, minced (optional)
How To Make oma's summer german potato salad

Step 1Add salt to cucumbers in a medium bowl and set aside to wilt.

Step 2Remove skin from potatoes when cool enough to handle. Slice.

Step 3In a large bowl, lightly toss potatoes and remaining ingredients until well mixed.

Step 4Squeeze the cucumbers in a kitchen towel to remove excess water. Add cucumbers and green onions to potato mixture and toss lightly.

Step 5If desired, garnish with minced chives.
