Ingredients

new potatoes
parsley-chive sauce (recipe follows)

PARSLEY CHIVE SAUCE

2 Tbsp
butter or margarine
2 Tbsp
flour
1/4 tsp
dry ground mustard
1-1/4 c
milk
1/3 c
shredded sharp cheddar cheese
2 tsp
dried parsley
2 Tbsp
choppes fresh chives or 2 teaspoons dried chives
1/4 tsp
salt

How to Make New Potatoes with Parsley-Chive Sauce

Step-by-Step

  • 1For the potatoes:

    Wash potatoes and peel a ½ inch strip around the center of each potato, leaving the rest of the skins on potato.
  • 2Cook potatoes in boiling water for 15 to 20 minutes, or until tender. Drain.
  • 3Serve with Parsley-Chive Sauce (below).
  • 4For the sauce:

    Melt butter in a saucepan over low heat. Add flour and dry mustard. Cook for 1 minute, stirring constantly.
  • 5Gradually add milk and stir continuously over medium heat until thickened.
  • 6Add remaining ingredients. Stir until cheese melts.

    Makes about 1-1/2 cups.
