Ingredients
- 5 large yucon gold potatoes
- salt and pepper
- 1/3 cup water
- 2 tablespoons butter
- 1/2 cup fresh mushrooms chopped
- 1/4 cup scallions chopped
- 1 cup shredded cheddar jack cheese
- sour cream
- chives
How To Make nacho potatoes

Step 1Preheat oven 350 degrees. Slice the potatoes and arrange in a swallow baking pan. Season with salt and pepper. Pour the water and butter over the potatoes top with foil and bake for 20 minutes

Step 2In a medium skillet add a little oil and saute the mushrooms and scallions until softened. Place the vegetable on top the potatoes and top with the cheese.

Step 3Place back in oven and bake until cheese is melted. Remove from oven and serve topped with sour cream and chives.
