Ingredients

  • 5 large yucon gold potatoes
  • salt and pepper
  • 1/3 cup water
  • 2 tablespoons butter
  • 1/2 cup fresh mushrooms chopped
  • 1/4 cup scallions chopped
  • 1 cup shredded cheddar jack cheese
  • sour cream
  • chives

How To Make nacho potatoes

  • Step 1
    Preheat oven 350 degrees. Slice the potatoes and arrange in a swallow baking pan. Season with salt and pepper. Pour the water and butter over the potatoes top with foil and bake for 20 minutes
  • Step 2
    In a medium skillet add a little oil and saute the mushrooms and scallions until softened. Place the vegetable on top the potatoes and top with the cheese.
  • Step 3
    Place back in oven and bake until cheese is melted. Remove from oven and serve topped with sour cream and chives.
