~ my sour cream, onion & parsleyed potatoes ~

This is a quick and easy recipe I threw together. The idea came from baked potatoes with butter and sour cream, I thought why not just mix the potatoes in the sour cream mixture, and boy did my family ever love them. Creamy and very flavorful and most of all, easy!

Ingredients

  • 3 cups cubed, boiled potatoes - drained
  • 1 cup sour cream
  • 1 tablespoon parsley paste or fresh chopped parsley
  • 2 tablespoons dried onion flakes
  • 1 tablespoon softened, butter
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon pepper

How To Make ~ my sour cream, onion & parsleyed potatoes ~

  • Step 1
    Boil potatoes until fork tender. Drain In a saucepan stir all other ingredients together. Carefully stir in hot potatoes, place on burner and heat slowly, or until the sour cream begins to bubble around the potatoes.
  • Step 2
    Serve hot! Would go well with just about any meat. Enjoy!
