My family loves these potatoes! My twist is the vinegar. It lends a very different flavor yet complements the potatoes so well.

Ingredients

  • 3 pounds potatoes
  • 1/2 large onion
  • 2 tablespoons olive oil
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1 teaspoon vinegar

How To Make my roasted potatoes with onions

  • Step 1
    Preheat oven to 375 degrees F.
  • Step 2
    Peel and dice potatoes. Place them in a mixing bowl.
  • Step 3
    Slice the onion and place it in the mixing bowl with the potatoes.
  • Step 4
    Drizzle olive oil over the mixture and toss until everything is coated.
  • Step 5
    Add the spices to the mixture. Toss until well coated.
  • Step 6
    Drizzle just a small amount of vinegar into the mix and stir well.
  • Step 7
    Add the mix to the baking sheet.
  • Step 8
    Bake at least 45 minutes, stirring once, until potatoes are golden, tender, and onions caramelize.
