This was another one of my tricks when we use to travel in our RV. A sweet lady camping next to us shared this and many more. They are so easy to make and freezes well also. What I like is you can use as many as you want to at one setting or use the whole pan when other camper come to visit.

Ingredients

  • 6 to 8 - medium yellow potatoes or white potatoes
  • 1 - stick of butter
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped scallions with greens
  • 12 teaspoons half and half
  • - salt and pepper to taste

How To Make my camping days = "individual scallopped potatoes"

  • Step 1
    Spray bottom and sides of a 12 cup muffin pan with cooking spray and set aside..
  • Step 2
    Preheat your oven to 400 degreese.
  • Step 3
    Pierce potatoes with fork, sprinkle with salt, wrap in paper towel and microwave for 15 minutes.
  • Step 4
    Remove potatoes from microwave and set aside to cool until they can be handled to slice, they should be firm.
  • Step 5
    Place 1/2 tablespoon of butter in each cup of muffin pan.
  • Step 6
    Then add a slice of potato, a pinch of salt and pepper.
  • Step 7
    Then add some cheese.
  • Step 8
    Repeat layers of potatoes and cheese until cups are filled.
  • Step 9
    Top each mold with a pat of butter and drizzle each with 1 teaspoon of half and half.
  • Step 10
    Place in oven and bake for 20 to 25 minutes or until cheese is melted and potatoes are browned.
  • Step 11
    Remove from oven and serve two individual scalloped potatoes to each guest and sprinkle each with cut scallions along with your favorite meat,vegetable and salad.
  • Step 12
    *I used two layers but I suggest going up to three if your muffin pan is big. My camping muffin pan was small.
