mushroom stuffed baked potatoes
I was looking for something new to do with potatoes, found this in my recipe collection and hadn't tried it before, turned out great!

Ingredients
- 4 large baking potatoes
- 3 tablespoons butter, divided
- 1/2 pound fresh mushrooms, chopped
- 1/3 cup half-and-half or milk
- 1/2 teaspoon onion powder
- 1 teaspoon salt
- 1 dash black pepper
- 1/3 cup shredded cheddar cheese
How To Make mushroom stuffed baked potatoes

Step 1Scrub potatoes well. Bake at 425F for 55 minutes or until soft.

Step 2Cut a slice off top of each potato. Carefully scoop out pulp into a bowl, reserving 1/4-inch layer inside shells.

Step 3Melt 1 Tbsp butter in small skillet. Add mushrooms and saute for about 5 minutes.

Step 4Mash potato pulp with remaining butter. Add half-and-half, onion powder, salt, and pepper. Beat until fluffy.

Step 5Stir in mushrooms. Heap mixture in potato shells.

Step 6Arrange on baking sheet. Sprinkle with cheese.

Step 7Bake at 400F for 15 minutes or until golden brown.
