mushroom stuffed baked potatoes

I was looking for something new to do with potatoes, found this in my recipe collection and hadn't tried it before, turned out great!

Ingredients

  • 4 large baking potatoes
  • 3 tablespoons butter, divided
  • 1/2 pound fresh mushrooms, chopped
  • 1/3 cup half-and-half or milk
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt
  • 1 dash black pepper
  • 1/3 cup shredded cheddar cheese

How To Make mushroom stuffed baked potatoes

  • Step 1
    Scrub potatoes well. Bake at 425F for 55 minutes or until soft.
  • Step 2
    Cut a slice off top of each potato. Carefully scoop out pulp into a bowl, reserving 1/4-inch layer inside shells.
  • Step 3
    Melt 1 Tbsp butter in small skillet. Add mushrooms and saute for about 5 minutes.
  • Step 4
    Mash potato pulp with remaining butter. Add half-and-half, onion powder, salt, and pepper. Beat until fluffy.
  • Step 5
    Stir in mushrooms. Heap mixture in potato shells.
  • Step 6
    Arrange on baking sheet. Sprinkle with cheese.
  • Step 7
    Bake at 400F for 15 minutes or until golden brown.
