My mother has been making this casserole since I was a little girl. It's one of my all time favorite holiday dishes. Alot of people eat this as a side dish, but to me it's more a dessert. The topping really makes it special.

Ingredients
- 3 cups canned sweet potatoes - mashed
- 1 cup sugar
- 1/2 cup evaporated milk
- 2 - eggs
- 1/3 cup butter, softened
- pinch salt
- TOPPING
- 1/3 cup flour
- 1 cup brown sugar, firmly packed
- 1 cup coconut, flaked
- 1 cup pecans, chopped
- 1/3 cup butter, melted
How To Make mom's sweet potato casserole

Step 1Combine first 6 ingredients until smooth. Pour into 2 qt. casserole dish.

Step 2Combine next 5 ingredients until well mixed and spread over potato mixture.

Step 3Bake at 350 for 35 to 40 minutes.

Step 4Serve warm, but is also great cold out of the fridge.
