My mother has been making this casserole since I was a little girl. It's one of my all time favorite holiday dishes. Alot of people eat this as a side dish, but to me it's more a dessert. The topping really makes it special.

Ingredients

  • 3 cups canned sweet potatoes - mashed
  • 1 cup sugar
  • 1/2 cup evaporated milk
  • 2 - eggs
  • 1/3 cup butter, softened
  • pinch salt
  • TOPPING
  • 1/3 cup flour
  • 1 cup brown sugar, firmly packed
  • 1 cup coconut, flaked
  • 1 cup pecans, chopped
  • 1/3 cup butter, melted

How To Make mom's sweet potato casserole

  • Step 1
    Combine first 6 ingredients until smooth. Pour into 2 qt. casserole dish.
  • Step 2
    Combine next 5 ingredients until well mixed and spread over potato mixture.
  • Step 3
    Bake at 350 for 35 to 40 minutes.
  • Step 4
    Serve warm, but is also great cold out of the fridge.
