Ingredients
- 1/4 cup onion, chopped
- 1 can cream of celery soup or cream of mushroom soup
- 3 ounces cream cheese, cubed
- 4 cups frozen southern-style hash brown potatoes or potatoes o'brien
- 1/3 cup shredded cheddar cheese

Step 1Preheat oven to 400 degrees F. Grease 1 qt casserole dish.

Step 2In 1 qt saucepan over medium heat, cook onion until tender. Stir in soup, cream cheese, stir until smooth & hot.

Step 3In casserole dish, alternate layers of frozen potatoes & hot cream sauce, ending with sauce layer. Cover & bake 45 minutes or until sauce & potatoes are tender. Remove from oven & sprinkle with cheddar cheese.
