Ingredients
- 2 pounds white potatoes
- 1 cup mayonnaise, preferably generic
- 1 medium white onion, diced
- 4 medium eggs, hard boiled
- 2 pinches paprika
- 2-3 pinches salt and pepper to taste
How To Make mom's potato salad

Step 1Cover potatoes with water in 4-quart saucepot; bring to a boil over medium-high heat. Reduce heat to low and simmer until potatoes are tender, about 10 minutes. Drain and cool and peel.

Step 2Combine Mayonnaise, salt, and pepper in large bowl.

Step 3Add potatoes, onion and eggs and toss gently.

Step 4Add Salt and Pepper to taste
