moms potato salad

This is my favorite potato salad. Whenever we have a family gathering, my kids request this from me. (After eating this all my life, It is my Mom's recipe) no other potato salad tastes right to me. Hope everyone enjoys it as much as we do, and feel free to tweak it with your own tastes.

Ingredients

  • 10 lbs medium boiled potatos
  • 1 or 2 large sweet onions
  • 18 large boiled eggs
  • 2 sprigs celery stalks,finely chopped
  • 1 medium jar of dill pickles or relish
  • 1 medium jar of bread and butter pickles chopped
  • 1 tablespoon garlic powder
  • pinch salt to taste
  • pinch pepper to taste
  • tablespoon dried basil
  • large jar mayonnaise, not salad dressing
  • 1/2 cup vinegar

How To Make moms potato salad

  • Step 1
    wash and boil the potatoes in the vinegar and enough water to cover potatoes. Boil until done but not mushy,at the same time boil the eggs until done. . Drain and let cool
  • Step 2
    When potatoes and eggs are cool enough to mix, peel if wanted or leave peelings on, I leave on when I use red potatoes, which is what I usually use, Chop potatoes into bite size pieces, Slice eggs into slices, add salt, pepper, garlic powder, and basil. stir until mixed.
  • Step 3
    Chop the celery finely, the onion,the bread and butter pickles and the dill pickles. add to potato and egg mixture, I usually use 3/4 to a whole jar of mayonnaise, enough to make it creamy and not dry. The vinegar flavors the potatoes so there is no need to add mustard.sometimes, I may add a little of the pickle juice to mayonnaise, but not so much as to make it runny., stir until well mixed and cover and cool.
