  Preheat oven to 350 degrees F.

  Pierce sweet potatoes with fork, boil, 20 - 25 minutes. Drain. Peel & cool. Cut 1/2" thick slices.

  In bowl, combine honey, orange juice & zest, salt & pepper; mix well.

  Layer sliced sweet potatoes in dish. Drizzle with 1/3 of honey mixture & dot with 1/3 of the butter. Repeat 2 more layers. Bake 1 hour, baste every 15 minutes with honey mixture. Serve hot.
