5 lbpotatoes (boiled or baked, peeled and diced)

4 Tbspdill pickle relish

1/2 ccelery (diced)

1 mediumgreen bell pepper (cleaned and diced)

1 mediumonion (diced)

6 largeradishes (diced)

1/2 cgreen olives (rough chopped)
-
2 mediumroma tomatoes (diced and drained)

1 largecucumber (seeds removed and diced small)
-
6 largehard boiled eggs (chopped)
-
2 to 2 1/2 cmayonnaise (i like hellmans... adjust mayo to taste)

2 Tbspspicy brown mustard
-
2 Tbspparsley flakes
How to Make Mom Thurlby's Super Yummy Potato Salad
- I like to dice my vegetables for this small and my potatoes into about half inch cubes but dice them to any size you wish.
Mix everything except potatoes, mayo and eggs together. Let stand for about 30 minutes for flavors to meld some. - Add potatoes and mix well with vegetable mixture. Add mayo and eggs. mix well.
If you like less mayo then try 2 cups. I usually start with almost 2 cups and see how the consistancy is the add from there.
Now salt and pepper to taste. - I like to use russet potatoes. I like the fluffy potato consistancy. Sometimes I add some horseradish to give it a little kick. I made 50 lbs of this for a friends wedding and there wasn't any left!
