mom thurlby's super yummy potato salad
(1 RATING)
Mom Thurlby was my mother-in-law but I thought of her as my mom. She made this potato salad for every picnic, BBQ and family gathering and there was never any left over! This tastes so awesome after it has sat in the fridge over night. Try it with everything before you omit ingredients. I hate radishes but I love them in this! If you leave out the cucumber and green olives and add bacon, you have my mother's potato salad which is very good also! I hope you like this! ENJOY! Yummy stuff!

How To Make mom thurlby's super yummy potato salad
-
Step 1I like to dice my vegetables for this small and my potatoes into about half inch cubes but dice them to any size you wish. Mix everything except potatoes, mayo and eggs together. Let stand for about 30 minutes for flavors to meld some.
-
Step 2Add potatoes and mix well with vegetable mixture. Add mayo and eggs. mix well. If you like less mayo then try 2 cups. I usually start with almost 2 cups and see how the consistancy is the add from there. Now salt and pepper to taste.
-
Step 3I like to use russet potatoes. I like the fluffy potato consistancy. Sometimes I add some horseradish to give it a little kick. I made 50 lbs of this for a friends wedding and there wasn't any left!
