I have made this dish for many years and everyone always raves about it. It's simple, easy and can be made the day or night before.

Ingredients
- 8 cups potatoes (cooked and diced) i use red.
- 1 cup mayonnaise
- - salt & pepper to taste
- 1 pound processed american cheese, diced
- 1/2 cup chopped onion
- 4 - 6 slices bacon, fried
- 1/2 cup green or black olives (i use black)
How To Make mississippi potatoes

Step 1Toss potatoes with mayonnaise, salt, pepper, diced cheese and onion. Place mixture in a greased 9 x 13 inch pan. Sprinkle with crumbled bacon and olives. Bake at 325 degrees for 1 hour. Can be made ahead and frozen.
