These are the ultimate pan-fried potatoes made with very simple ingredients with a delicious result. The onions smell amazing while they're cooking down in bacon drippings. Once the sliced potatoes are added, they begin to absorb the smoky flavor. The potatoes get wonderful crispy bits while frying. Seasoned perfectly, they could replace hash browns as a side dish for breakfast or lunch. Versatile, they'd be tasty with grilled steak too.

Ingredients For mississippi mash

1 mdwhite onion, sliced

4 Tbspbacon grease/shortening

1 1/2 lbnew red potatoes

salt

pepper

garlic powder
How To Make mississippi mash

1Saute the sliced onions in the bacon grease or shortening until golden brown over a medium heat.

2Slice the potatoes very thin.

3Layer half of the potatoes over the onions. Sprinkle with salt, pepper, and garlic powder.

4Layer the other half of the potatoes and sprinkle them with salt, pepper, and garlic powder.

5Cover and let cook on medium heat.

6Stir often while cooking.

7As the potatoes soften, use the end of the spatula to mash and break the potatoes up. The onions will get browner and caramelize more.
