These are the ultimate pan-fried potatoes made with very simple ingredients with a delicious result. The onions smell amazing while they're cooking down in bacon drippings. Once the sliced potatoes are added, they begin to absorb the smoky flavor. The potatoes get wonderful crispy bits while frying. Seasoned perfectly, they could replace hash browns as a side dish for breakfast or lunch. Versatile, they'd be tasty with grilled steak too.

Ingredients For mississippi mash

  • 1 md
    white onion, sliced
  • 4 Tbsp
    bacon grease/shortening
  • 1 1/2 lb
    new red potatoes
  • salt
  • pepper
  • garlic powder

How To Make mississippi mash

  • Saute sliced onions in bacon grease.

    Saute the sliced onions in the bacon grease or shortening until golden brown over a medium heat.
  • Thinly slice the potatoes.

    Slice the potatoes very thin.
  • Layer half of the potatoes over the onions and season.

    Layer half of the potatoes over the onions. Sprinkle with salt, pepper, and garlic powder.
  • Add the other half of the potatoes and season again.

    Layer the other half of the potatoes and sprinkle them with salt, pepper, and garlic powder.
  • Cover and let cook.

    Cover and let cook on medium heat.
  • Stir often while cooking.
