microwave parmesan potatoes

These are quick and easy to make. I hope you enjoy them as they have an excellent flavor. One of my favorites. Got the recipe out of a microwave cook book.

Ingredients

  • 2 tablespoons margarine
  • 2 medium potatoes, unpeeled, sliced 1/4" thick
  • 1/3 cup chopped onion
  • 1 clove garlic minced
  • 1/2 cup green pepper--diced
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 cup grated parmesan cheese
  • - paprika
  • - chopped parsley

How To Make microwave parmesan potatoes

  • Step 1
    Melt margarine in shallow 9" microwave dish. Add potatoes, onion and garlic. Toss. Cover loosely with seran and place in microwave on full power for 5 minutes.
  • Step 2
    Stir in green pepper, salt and pepper: Toss, cover with loose ceran and microwave on full power 3 minutes.
  • Step 3
    Gently mix in cheese. Toss gently and dust with paprika. Microwave on full power, uncovered, 3 minutes. Let rest 2 minutes. Sprinkle with parsley.
