You can make these on the grill or in the oven. I like them on the grill the best, as it lends a smokiness to the dish. I make this quite often in the summertime !

Ingredients For mesquite potatoes, millie's

  • 4 - 5 md
    russet potatoes, thinly sliced
  • half md
    vadalia onion, thinly sliced
  • 1 lg
    carrot, very thinly sliced
  • 4 Tbsp
    olive oil
  • 1 tsp
    sea salt
  • 2 tsp
    mccormick's mesquite grill mates seasoning
  • 1/4 tsp
    black pepper
  • 1 Tbsp
    minced chives
  • 1/4 tsp
    celery seed
  • 1/4 tsp
    cheyenne red pepper
  • 1/4 tsp
    ground cumin
  • 1 1/2 tsp
    minced garlic

    Heat grill or oven to 450 degrees F* Slice all the veggies into large bowl and toss to mix up ...

    In a small bowl, combine olive oil and the rest of the ingredients and mix well. Pour over potatoes. Toss and stir to coat.

    Spray a pan and pour potato mixture in. Cover with foil. Grill or bake for 15 minutes, remove foil and stir. Return, uncovered, to grill or oven. Cook 5 - 10 minutes longer or till tender.
