Ingredients
- 4 - 5 medium russet potatoes, thinly sliced
- half medium vadalia onion, thinly sliced
- 1 large carrot, very thinly sliced
- 4 tablespoons olive oil
- 1 teaspoon sea salt
- 2 teaspoons mccormick's mesquite grill mates seasoning
- 1/4 teaspoon black pepper
- 1 tablespoon minced chives
- 1/4 teaspoon celery seed
- 1/4 teaspoon cheyenne red pepper
- 1/4 teaspoon ground cumin
- 1 1/2 teaspoons minced garlic

Step 1Heat grill or oven to 450 degrees F* Slice all the veggies into large bowl and toss to mix up ...

Step 2In a small bowl, combine olive oil and the rest of the ingredients and mix well. Pour over potatoes. Toss and stir to coat.

Step 3Spray a pan and pour potato mixture in. Cover with foil. Grill or bake for 15 minutes, remove foil and stir. Return, uncovered, to grill or oven. Cook 5 - 10 minutes longer or till tender.
