Ingredients
- YAMS
- 4 large yams scrubbed
- 1 cup brown sugar
- 1/4 cup butter
- 1 teaspoon salt
- 1 teaspoon ground thyme
- 1 teaspoon each cinnamon and cloves
- 1/2 teaspoon ground nutmeg
- 4 large egg yolks
- MERINGUE
- 4 large egg whites
- 1/2 cup sugar
How To Make meringue yam casserole

Step 1Preheat oven 375 degrees. Bake the yams until soft 1 hour. Let cool 30 minutes. Scoop the insides out and place in large bowl. Beat the yams with the remaining ingredients except the meringue topping. Place in a greased baking dish.

Step 2Bake at 350 degrees for 30 minutes. Meanwhile beat the egg whites until stiff. Add the sugar and beat until glossy.

Step 3Top the yams with the meringue topping. Place back in oven for 10 to 15 minutes until browned.
