If you have problems with your child eating meals this may help. Give them cupcakes for dinner. For that meat and potatoes man in your life, on his birthday give him cupcakes.

Ingredients

  • 2 large
    potatoes for mashing
  • 2 Tbsp
    butter
  • 1/4 c
    cream
  • 1/4 c
    chives
  • 1/4 c
    cheddar optional
  • MEATLOAF CUPCAKES

  • 1 lb
    turkey burger
  • 1
    egg
  • 1/2 c
    bread crumbs
  • 1/4 c
    diced onion
  • 1/4 c
    diced green pepper
  • 1/4 c
    milk
  • 6
    foil cupcake liners

How to Make Meat Loaf Cupcakes with Mashed Potato Frosting

Step-by-Step

  1. Preheat oven to 350 degrees.
  2. Peel and chop into small cubes 2 large potatoes and boil until tender.
  3. Mix together all the ingredients for meatloaf and line a cup cake pan with FOIL cup cake liners. Fill liners with meat mixture Bake at 350 degrees for 20-25 minutes
  4. Drain potato's and mash. Add butter,cream,shredded cheddar,and salt and pepper. Garnish with chopped chives
  5. Pipe the mashed potatoes onto the meatloaf cupcakes.
