mashed red potatoes with chives

OK, this was just put together with leftover potatoes - I had cooked a lot of red potatoes with butter and chives for Christmas dinner, and wanted to use the leftovers in something different. This was really good! I have given the directions as starting from scratch, but you can use leftover potatoes if you have them. Mine already had the butter in them.

Ingredients

  • MASHED RED POTATOES WITH CHIVES
  • 3 cups cooked red potatoes with butter and chives
  • - (see recipe for this below)
  • 1/2 cup chicken broth
  • 1/2 cup sour cream
  • - salt and pepper to taste
  • 1 tablespoon extra chopped chives if desired
  • RED POTATOES WITH BUTTER AND CHIVES
  • 4-5 medium red potatoes, washed and cut into quarters
  • - water to barely cover
  • 1/2 stick (1/4 cup) butter
  • 2 tablespoons chopped chives
  • - salt and pepper to taste

How To Make mashed red potatoes with chives

  • Step 1
    To make the red potatoes, slowly cook the potatoes in water until soft but not mushy, about 15 minutes. Then drain off water and stir in butter, chives, salt and pepper. Serve hot. For mashed potatoes, measure 3 cups and refrigerate overnight if desired.
  • Step 2
    Using leftover red potatoes, slowly stir them with the chicken broth over medium heat in a saucepan until hot. Mash with a potato masher until smooth.
  • Step 3
    Remove from heat, stir in sour cream and a little salt and pepper to taste. Sprinkle with extra chives if desired.
