How to Make Mashed Potatoes with Fried Shallots
- Place about 1 inch oil in skillet. Fry the shallots in hot but not smoking oil in batches until brown and crispy. Remove with slotted spoon to plate and set aside.
- Cook the potatoes in boiling salted water. Drain. Put through a ricer into a bowl containing the butter. Stir and add cream or milk to desired consistency. Stir in the shallots. Taste and adjust for salt and pepper Serve with butter or gravy
