Ingredients For mashed potatoes with fried shallots

  • 6
    shallot chopped
  • 2 1/2 lb
    red potatoes about 5 large peeled
  • 1/2 stick
    butter
  • salt and pepper
  • cream of milk for consistency

How To Make mashed potatoes with fried shallots

    Place about 1 inch oil in skillet. Fry the shallots in hot but not smoking oil in batches until brown and crispy. Remove with slotted spoon to plate and set aside.

    Cook the potatoes in boiling salted water. Drain. Put through a ricer into a bowl containing the butter. Stir and add cream or milk to desired consistency. Stir in the shallots. Taste and adjust for salt and pepper Serve with butter or gravy
