Ingredients
- 8 large red skin potatoes peeled and cubed
- 4 cloves garlic
- 1 cup crumbled blue cheese
- 2 tablespoons each butter & chopped parsley
- salt and pepper
- half & half to make the potatoes a smooth consistency
How To Make mashed potatoes with blue cheese & parsley

Step 1Bring a pot of water to a boil. Add salt. Add the potatoes and garlic cloves and cook until the potatoes are soft.

Step 2Place the blue cheese, butter, and parsley in a bowl. Drain the potatoes and put them through a ricer.

Step 3Stir the potatoes adding the cream until desired consistency. Season with salt and pepper.. Serve with a dollup of butter
