Ingredients
- 2 cups leftover mashed potatoes
- 3 ounces goat cheese (chevre for example)
- 2 tablespoons fresh chives, chopped
- 2 tablespoons flour
- 2 - eggs, beaten ( i used only 1 egg, small)
- - salt, to taste
- - black pepper or white pepper, to taste
How To Make mashed potato bake w/chevre and fresh chives

Step 1Place the leftover mashed potatoes in a large mixing bowl. Add the other ingredients and stir together.

Step 2Butter or oil a pie pan or similar. Spoon the mashed potato mixer into the pie pan, smoothing the top.

Step 3Bake at 375 degrees for about 35-40 minutes or until the edges are lightly browned and crispy.
