goat cheese (chevre for example)

fresh chives, chopped

flour

eggs, beaten ( i used only 1 egg, small)
salt, to taste
black pepper or white pepper, to taste

How to Make Mashed Potato Bake w/Chevre and Fresh Chives

Step-by-Step

  • 1Place the leftover mashed potatoes in a large mixing bowl. Add the other ingredients and stir together.
  • 2Butter or oil a pie pan or similar. Spoon the mashed potato mixer into the pie pan, smoothing the top.
  • 3Bake at 375 degrees for about 35-40 minutes or until the edges are lightly browned and crispy.
