Mashed Potato Bake w/Chevre and Fresh Chives
2 cleftover mashed potatoes
3 ozgoat cheese (chevre for example)
2 Tbspfresh chives, chopped
2eggs, beaten ( i used only 1 egg, small)
·salt, to taste
·black pepper or white pepper, to taste
How to Make Mashed Potato Bake w/Chevre and Fresh Chives
- Place the leftover mashed potatoes in a large mixing bowl. Add the other ingredients and stir together.
- Butter or oil a pie pan or similar. Spoon the mashed potato mixer into the pie pan, smoothing the top.
- Bake at 375 degrees for about 35-40 minutes or until the edges are lightly browned and crispy.
