Ingredients

  • 2 cups leftover mashed potatoes
  • 3 ounces goat cheese (chevre for example)
  • 2 tablespoons fresh chives, chopped
  • 2 tablespoons flour
  • 2 - eggs, beaten ( i used only 1 egg, small)
  • - salt, to taste
  • - black pepper or white pepper, to taste

How To Make mashed potato bake w/chevre and fresh chives

  • Step 1
    Place the leftover mashed potatoes in a large mixing bowl. Add the other ingredients and stir together.
  • Step 2
    Butter or oil a pie pan or similar. Spoon the mashed potato mixer into the pie pan, smoothing the top.
  • Step 3
    Bake at 375 degrees for about 35-40 minutes or until the edges are lightly browned and crispy.
