From The website indicates that this recipe was intended for using up those leftover mashed potatoes from the Thanksgiving feast. I think it's a great way almost any time of the year for using up a surplus of spuds-whether made from scratch or instant.

    leftover mashed potatoes
  • 3 oz
    goat cheese (chevre for example)
  • 2 Tbsp
    fresh chives, chopped
  • 2 Tbsp
  • 2
    eggs, beaten ( i used only 1 egg, small)
  • ·
    salt, to taste
  • ·
    black pepper or white pepper, to taste

How to Make Mashed Potato Bake w/Chevre and Fresh Chives


  1. Place the leftover mashed potatoes in a large mixing bowl. Add the other ingredients and stir together.
  2. Butter or oil a pie pan or similar. Spoon the mashed potato mixer into the pie pan, smoothing the top.
  3. Bake at 375 degrees for about 35-40 minutes or until the edges are lightly browned and crispy.
