- 4 cups leftover mashed potatoes
- 2 scallions diced
- 2 tablespoons mascarpone cheese
- 1 cup gruyere cheese shredded
- 3 tablespoons olive oil
How To Make mashed potato pancake with gruyere cheese

Step 1Mix the mashed potatoes, scallions, Mascarpone cheese and Gruyere cheese together.

Step 2Add oil to skillet. Shape the mashed potatoes into balls and flatten into pancake and fry until browned and crisp on both sides.
