I always keep a can of French-fried onion rings on hand, as it makes a great topping for everything from green bean casserole to these delicious mashed potatoes. Cook times do not include time for boiling potatoes.

Ingredients

  • 10 medium potatoes, peeled and chopped
  • salt & pepper, to taste
  • 4 - 8 ounces cream cheese, softened
  • 2 tablespoons all-purpose flour
  • 2 large eggs, lightly beaten
  • 3 tablespoons fresh parsley, minced
  • 2 - 3 tablespoons chopped chives
  • 1 can French-fried onion rings, crushed (2.8 oz)

How To Make mashed potato casserole with crunchy onion topping

  • Step 1
    Cover potatoes with water and bring to a boil. Cook until tender and drain thoroughly.
  • Step 2
    Use a ricer or potato masher and add salt and pepper to taste. Add softened cream cheese and use a mixer to beat until smooth.
  • Step 3
    Combine flour, eggs, parsley, and chives, mix well.
  • Step 4
    Add the mixture to the potatoes and mix well.
  • Step 5
    Place mashed potatoes into the prepared baking dish. Add crushed French-fried onion rings to the top.
  • Step 6
    Bake potatoes at 325 degrees for 30 minutes or until golden. Don't let the topping burn.
