I always keep a can of French-fried onion rings on hand, as it makes a great topping for everything from green bean casserole to these delicious mashed potatoes. Cook times do not include time for boiling potatoes.

Ingredients
- 10 medium potatoes, peeled and chopped
- salt & pepper, to taste
- 4 - 8 ounces cream cheese, softened
- 2 tablespoons all-purpose flour
- 2 large eggs, lightly beaten
- 3 tablespoons fresh parsley, minced
- 2 - 3 tablespoons chopped chives
- 1 can French-fried onion rings, crushed (2.8 oz)
How To Make mashed potato casserole with crunchy onion topping

Step 1Cover potatoes with water and bring to a boil. Cook until tender and drain thoroughly.

Step 2Use a ricer or potato masher and add salt and pepper to taste. Add softened cream cheese and use a mixer to beat until smooth.

Step 3Combine flour, eggs, parsley, and chives, mix well.

Step 4Add the mixture to the potatoes and mix well.

Step 5Place mashed potatoes into the prepared baking dish. Add crushed French-fried onion rings to the top.

Step 6Bake potatoes at 325 degrees for 30 minutes or until golden. Don't let the topping burn.
